Goat Cheese and Sundried Tomato Sandwich

There are so many things to be thankful for, and today at lunch I realized if it was not for gambling, I would not sit here with a full tummy. Now for all of you that are really worried about me, I have not taken up gambling, or not yet; but I did make a sandwich for lunch.

According to legend the word sandwich that we use today was born in London during the very late hours one night in 1762 when an English nobleman, John Montagu, the Fourth Earl of Sandwich (1718-1792), was too busy gambling to stop for a meal even though he was hungry for some food. The legend goes that he ordered a waiter to bring him roast-beef between two slices of bread. The Earl was able to continue his gambling while eating his snack; and from that incident, we have inherited that quick-food product that we now know as the sandwich. Today we find ourselves in a position there the sandwich has been lifted from it’s meager origins, it a literally a blank canvas that can be colored to the artists desire. So if your excuse has always been that you are not a cook but an artist, here is your chance.

My art today really consisted out of some of my favorite food, and naturally something that I had on hand; as you all know by know I am not a good shopper, and most of the time I cook with what is on hand.

The only drawback to the sandwich is that most of us do not have a waiter or butler that can bring us a sandwich, so get up from where you are sitting, pull yourself away from gambling and make a sandwich!

Goat Cheese and Sundried Tomato Sandwich

Serves 1

Prep time 5 minutes

Cook time 8 minutes

Ingredients

  • cooking spray
  • 2 slices of your favorite bread (my favorite is Johan’s bread from the Basic Bread Recipe, but if I do not have that on hand I like the mieche from Panera bread)
  • 3 tablespoons (45 ml) goats’  cheese (or your favorite cheese)
  • 3 tablespoons (45 ml) sundried tomatoes
  • ¼ avocado pear
  • micro greens, salad or basil

Directions

1 Heat a Panini pan

2 Spray the outside of the bread with cooking spray.

3 Place 1 piece of bread on the working surface.  Build the sandwich with cheese, tomatoes, micro greens and avocado.  Place the second slice of bread on top.

4 Grill the bread in a Panini pan till golden brown.

TIPS

1 Use any filling you want….

2 Since I do not have a Panini pan I used my cast iron steak pan. This pan also creates lovely patterns on the outside of the sandwich.
