Pan fried steak and tomatoes

Steak, tomatoes, mushrooms and cucumberIt is the first day of spring, flowers are in full bloom, and there is a feeling of excitement in the air.  On days like this you want to spend little time in the kitchen and as much time  as possible in the fresh air. Early in spring there is always a nip in the air, and that was the deciding factor in making the decision to go for a warm meal vs. a fresh salad. My mom did a great job to prepare a special dinner that highlight the abundance of the season. Fresh tomatoes, and cucumbers combined with a lightly breaded steak and mushrooms. As all the cooking was done in 1 pan, wash up was quick, and that left us with time to visit.

Pan fried steak and tomatoes

Prep time: 5 minutes                                                  Cook time: 15 minutes

Serves 4

Economical                                                                    Quick and Easy

Ingredients

3 tablespoons flour

¼ teaspoon salt

⅛ teaspoon freshly grounded pepper

1.5 pounds (1 kg) steak

2 large plump tomatoes cut into 8 slices

1 cucumber, scored with a fork and cut into thin slices

3 tablespoons oil

1 can mushrooms

Directions

1 Heat 2 tablespoons oil in pan. Mix the first 3 ingredients together. Dip the steak in the flour mixture and add to the pan. Fry the steak about 5 minutes per side (see tips.) Remove steak from pan and allow it to rest.

2 Add 1 tablespoon of oil to the pan. Add the tomatoes and mushrooms to the pan. Sprinkle with salt and pepper. Fry the tomato slices in the oil until browned on both sides.

3 Serve the fried tomatoes, mushrooms and steak with fresh cucumber slices.

 

TIPS

1 Review the Best Cooking Times & Temps to find the ideal temperature to cook meat.

2 If you do not like cucumber replace it with a Caesar Salad.
