Linguine with Salami and Tomatoes

tonight’s dinner is most probably one of the fastest I have ever made, and it was delicious. I planned just to heat the leftover soup from last night, but alas, when I got to the fridge one of the kids were there before me. So no soup, and a hungry family. When we traveled to Italy we had the best cold meats including salame in and pasta everywhere. We would sit in a little piazza and live “la docle vita” or our best live. Making a pasta dish at home that reminds me of this good life was one of the first things I did when we got home.

I still had lovely homemade salami that Kevin’s mom made, fresh pasta and cocktail tomatoes. I always have olive oil and cream on hand.  So a simple dish, done in 15 minutes. I did save some time by boiling the water in the kettle vs. letting it come to a boil on the stove top.

Linguine with salami, tomatoes and a light cream sauce, done in 15 minutes is all the busy cook needs on a weeknight.
Ingredients
  • 1 tablespoon (15 ml) olive oil
  • 1 cup (250 ml) cocktail tomatoes (rinsed and dried)
  • 1 lb (450 g) fresh pasta
  • 1 cup (250 ml) salami cubed
  • 4 tablespoons (60 ml) heavy whipping cream
  • 2 basil leaves
Instructions
  1. Heat 4 quarts water in a kettle (or a large saucepan)
  2. Heat the olive oil in a large sauce pan. Add the tomatoes and cook for about 2 -3 minutes till the skin turns light brown. Remove the tomatoes from the saucepan, set aside to use later
  3. Pour the boiling water in the saucepan. Add 1 teaspoon of salt to the water. Add the pasta and boil according to the package directions. For fresh pasta this is about 2 – 3 minutes.
  4. Drain pasta (keep about a 1/4 cup of the paste water.)
  5. Add the pasta back to the saucepan, add the 1/4 cup saved pasta water, the tomatoes and salami. Bring to a quick boil. Add the cream and stir to mix all the ingredients.
  6. Add salt and freshly grounded pepper to taste.
  7. Serve hot with bread and a salad.

The homemade salami is so tasty, and it worked very well in this dish. Who knows, maybe I will get Ramona to share her salami recipe with me one day. For those of you that do not have a “Ramona” friend, store-bought salami will work just as well.

TIPS

Dried pasta can be used instead of fresh pasta. The dried pasta will take about 10 minutes longer to cook. Follow package directions.

Replace the salami with chicken, ham or any other meat.

Use you favorite type  of pasta, I just had Linguine on hand, but feel free to use spaghetti or any other shape pasta.

I love fresh basis with pasta, but it can be replaced with fresh parsley.
