It was a happy day when my best friend Sintra turned 50, at least it was a happy day for me. The theme for the party was a “Mexican Fiesta” and I decided to surprise her with a Sombrero Cake, and some Mexican themed cup cakes.
How to
Use your favorite white cake batter and bake the cake in a mixing bowl with the shape similar to the body of the sombrero.
Buy white fondant and color it with blue. Make sure that the color is evenly distributed throughout the fondant or your sombrero will be “speckled,” not that there is anything wrong with a speckled sombrero, but it might look like the hat is more than 50 years old.
Place the cake in the middle of a serving tray, use the tray to stabilize the rim of the hat.
Roll the fondant 1/4 inch thick. Roll the piece large enough to cover the cake and allow for the sombrero’s rim, or is that brim? If you use a smaller piece, the seam of the fondant will show. Cover the cake with white frosting, and place the fondant over the frosting. Shape the fondant to create the edge of the rim. Add colored shapes to make an interesting hat. This is your opportunity to be creative!
The cupcakes receive a layer of frosting followed by colored rolled fondant. Use a sharp knife to cut shapes out of the fondant, or create 3 dimensional images by shaping the fondant into the desired shapes. Slightly wet the backside/underside of the shape before sticking it to the cupcake. The wet surface serves as glue to add the decoration to the cupcake/cake.
As always the party was a hoot, and with Madeleine and all her fun sayings I laughed until my eyes watered.
